I would personally consider it pretty rude, yeah. If something is truly hard to find, like a minfernal, and you just kill it off without catching it... crappy move. For pets that are that hard to get, I catch whatever I can find first, no matter its quality, and use a battle stone on it to bring it up to rare quality.
If it's only moderately rare, such as Tiny Twisters in Arathi Highlands, I figure you can do whatever you want with those. Finding a Tiny Twister is a matter of an hour or two, where a Minfernal can take weeks.

Patience! We received a ton of applications and it took us some time to go through them all. We've made our short list, and now we're going through the process of logistics -- contacting who we've chosen, making sure they're still up for the job, and then getting them contracted. You'll see them soon, but not soon-soon.

All wild pets can be rare-quality. There were a few bugged at the launch of Mists of Pandaria that only went as high as uncommon, but I believe those have all been fixed.
